HOWTO Create MANIFEST.MF Classpath From Ant
When you have all your .jar files in a directory you can use ant to create the MANIFEST.MF file with the dependencies automatically.

Quite a clever hack. However, I think if I had to solve anything this complex I'd either use Rake, or just a custom build script (probably written in Ruby).
