I'm one of those freshies who graduated a few years ago. I didn't get any deep exposure to OO and the projects I had to do were to trivial to be a full fledged OO application. Fortunately the school has started to assign students with senior year projects that are significant enough that they can get their hands dirty with it. I had to learn it all on the job.

Good thoughts. I'm still skeptical toward OOP as the "one paradigm to rule them all", but it's hardly worth discarding entirely.
