Give your service away for free, acquire a lot of customers very efficiently through word of mouth, referral networks, organic search marketing, etc, then offer premium priced value added services or an enhanced version of your service to your customer base.

It's mostly pie in the sky!
Since most of you have never done an open-source project, I'll just point one thing out. In many cases, your "customers" have the same skill set as you, so what do they need your services for? How many of you have ever "bought" services and/or support? So, how many are going to buy your services and/or support?
