The article provides an incredibly poor explanation of how this works. I'd recommend clicking through the link to recaptcha.net for a good explanation.

really its not particularly complicated the CAPTCHA provides 2 words, one is known by the system one is not, if the user guesses the known correctly then they are allowed through to the site, their guess for the unknown word is then compared to others, when a high percentage agrees that word is added to the known list (and to the digitised book)

Not complicated and pretty much excatly what the intro to the article says.
